Chocolate Chunk Cookies
I have tried multiple versions of “healthier” chocolate chip cookies which have just been ok, nothing special. I think I finally got it perfect! My husband even said “You made real chocolate chip cookies!?” These aren’t healthy!” Needless to say, I was very excited! They are delicious and best of all free of chemicals and toxins!
2 cups whole wheat flour
1 tsp baking soda
¾ tsp salt
1 ½ cups coconut sugar
1 stick softened grass-fed butter
½ cup coconut oil
2 tsp vanilla extract
1 ½ cups dark chocolate chunks (semisweet chips work well too)
Preheat oven to 350 degrees. In a medium bowl, combine flour, salt, and baking soda and set aside. In another medium sized bowl, combine butter, oil, and sugars. Beat on medium-high with an electric mixer until thoroughly combined. Next, add the eggs one at a time and combine. Add the dry ingredients slowly and mix to combine. Add the vanilla and mix with electric mixer one last time. Add the chocolate chunks and stir to combine. Using a spoon or small ice cream scoop, place the dough in balls on a baking sheet and bake in a 350 degree oven for 15-18 minutes.
I also love to make these and place the dough onto a piece of plastic wrap and roll it into a log. Then, I wrap that in aluminum foil and place it in the freezer. Once frozen, you can take the log of dough out and cut ½ inch slices to enjoy warm chocolate chip cookies whenever you like!
