Easy Breakfast Frittata
1 lb sausage
1/2 a pepper, chopped
1/2 an onion, chopped
1/4 cup chopped mushroom, about 3-4
1/4 cup shredded carrots
salt & pepper
Brown sausage in a skillet. Then add in peppers and onion, continuing to brown until golden. Now add in chopped mushrooms, shredded carrots and kale or whatever you have in your kitchen! Lastly, stir in eggs and cook for a few minutes on the stovetop, making sure to incorporate the eggs throughout.
Throw your cast iron skillet in the oven and broil for 5 minutes. Tada! Now top with whatever you like. My favorites are chopped avocado, garlic infused olive oil, hot sauce and nutritional yeast.
